Albumen, Blood
Description
A glutinous powder obtained from animal blood.
Albumin refers generally to any protein that is water soluble, is moderately soluble in concentrated salt solutions, and experiences heat denaturation. Albumins are commonly found in blood plasma, and are unique from other blood proteins in that they are not glycosylated. Substances containing albumin, such as egg white, are called albuminoids.
